Fall is back, which means comfort food and cool weather is right around the corner. It’s the season for pumpkin everything, costume parties and spicy seafood linguine. Didn’t expect that last one? Then you’re definitely doing fall wrong. The crisp weather brings many dishes into the spotlight, especially seafood entrees that are often too heavy for the summer. Whether you’re a shrimp lover or a pasta connoisseur, there’s something for you at Marker 32, even when the leaves start to fall.
Blackened Mahi with Tasso Ham Gravy, Collards and Creamy Grits
One wonderful thing about fall is that you don’t have to be in a bathing suit anytime soon! This means you can have all the gravy and grits your hungry heart desires. September is a great time for mahi in Florida, so this dish naturally slides to the top of our list. Pair fresh mahi with a tasty tasso ham gravy (which has “fall in the south” written all over it) and you’re guaranteed to have a good night.
Recommended fall drink pairing:
- Cabernet Sauvignon
- Pale Ale
Rick’s All Day Seafood Soup
Okay, so this isn’t technically a main dish, but we couldn’t go without mentioning it; and if you order a full bowl you’ll definitely leave satisfied. Imagine all of your favorite seafood soaking in a rich, flavorful red broth. It’s filling, it’s heavenly, and not to mention this soup is practically crafted for cold weather. If you’re more of a soup and salad kind of person, we’ve got you covered. The perfect pairing for our seafood soup is our iceberg wedge with blue cheese dressing and crispy bacon. You have to admit, it’s hard to go wrong with bacon.
Recommended fall drink pairing:
- Sauvignon Blanc
- Cream Ale
Roast Cod Filet
This dish is served with brown butter, garlic, lemon, parsley potatoes and steamed vegetables. The seasonings are drawn out by roasting the fish filet perfectly in a way that compliments the fall flavors, especially when they’re mixed with brown butter. Brown butter makes the dish richer, but we’re not going to let that stop us from treating ourselves! If you’re considering letting it stop you, think of it this way: The steamed vegetables cancel out the calories from the brown butter and the potatoes. Are we right, or are we just hungry?
Recommended fall drink pairing:
- Bourbon Bliss – Buffalo Trace Bourbon, Benedictine, brown sugar simple syrup, orange bitters
- Grenache/Syrah
Spicy Seafood Linguine
If your eyes didn’t widen at the mention of linguine then something’s probably wrong. Pasta is the best thing ever created, and we have basically perfected it. Spicy pasta dishes should be an everyday indulgence during the fall, especially when fresh seafood is thrown into the equation. You really can’t go wrong with this dish.
Recommended fall drink pairing:
- Merlot
- Sauvignon Blanc
Because we know our audience, we know we have to mention the best fall desserts. We also know we have to tell you not to forget about key lime pie. Although it seems like a summery dessert, it’s great all year round, even during fall!
White Chocolate Bread Pudding
This ties back to the whole not-having-to-wear-a-bathing-suit thing. If you finish one of these completely on your own, we definitely won’t judge. The white chocolate adds an irresistible richness and depth to this standard dessert. Because of the richness added to an already sweet dish, your taste buds will love you. Your jeans, however, might fight back.
Sweet and Salty Chocolate Torte
It’s really hard to tell you this dessert is the best in the fall because you shouldn’t hesitate to eat it year round. But for the sake of making your fall nights just a little bit better, sneak this torte in after your meal. It’s sweet, it’s salty, it’s heavenly. Plus, chocolate (and dessert in general) is really never a bad idea.
Even though summer is coming to an end, you still have plenty to look forward to, especially when it comes to good food. We know your mouth is watering at this point, so throw on your sweaters, slip on your boots and put on your stretchy pants because Marker 32 is the place to feast when the temperatures drop.
